Saffron Almond Cake with Ikusei Cardamom Green Tea


250 gm soft butter

250 gm super fine sugar

4 eggs beaten

150 gm ground almond/almond meal

200 gm plain flour

2 tsp baking powder

90 ml Saffron milk


1 – Beat the butter and sugar together until light and fluffy. Add the eggs a little at a time until fully incorporated.

2 – Stir in the almonds, flour and baking powder and mix until smooth. Beat in the saffron milk. 

3 – Spoon the mixture into the prepared pan and bake for about 1 hour until it is risen and golden. Leave to cool in the pan for about 10 to 15 mins.
